The Art of Distillation

desticacao.jpg (20746 bytes)

Since   the Greeks and  Egyptians, up to the  Arab and finally Christian monks,
the art of distillation has  been fundamental to obtain perfumes, medicines,  drinks
and   liqueurs, which initially  were of a theurapeutic nature. This art,   reserved  for
a   privileged few, was  always carried out using natural products.

To  this  day, and  in a  world   ever   more artificial, Destilerias Pico continues to use
totally  natural products,  produced in the
same way for nearly two centuries, though
taking    advantage    of      what       modern technology can offer.

From the raw materials to the finished product,   our   production   process   is
especially    meticulous.  Using   expert
hands,  copper  stills, which permit the
extraction   of   the   purest     fruits    of
distillation, specially designed tools and
the absence of haste in production, result
in liqueurs of exquisite quality.

Distillation is carried out slowly, without
hurry  and  with  great   care,   separating
with exact measure the "head" (the initial
part of the  distillation  process)   and  the
"tail" (the  final  part of   the     distillation
process) from the  middle  or " heart", the most homogeneus, which will be used in
the subsequent process of elaboration.

The fruits of the distillation undergo different artisan processes before
being blended with the highest quality syrup, (a mixture of water and sugar). This is
the filtered and analysed, to check for the correct alcoholic strength, aroma, colour and
density. Finally, the product is bottled and packaged for sale.
